Harvested at peak ripeness, our 2021 Cabernet Sauvignon blends fruit from Devon Valley and Villiera for layered complexity. Fermented in pumpover tanks at 25°C, it underwent full malolactic fermentation in stainless steel before barrel aging. The wine matured for 12 months in French oak—20% new—bringing structure and finesse. This careful, hands-on process preserves purity of fruit while adding depth and age-worthiness to the final blend.
