Description
Fairview Cabernet Sauvignon 2022 is a medium-bodied Coastal Region red that balances ripe dark fruit with freshness, earthy detail, and supple tannins. Fermentation in both wooden foudres and stainless steel brings together texture and fruit purity, while extended French oak maturation adds structure without overwhelming the wine's natural character.
The nose opens with ripe blackberries, violets, and subtle notes of forest floor. On the palate, fresh plum and blueberry flavors lead, supported by soft, well-integrated tannins and measured oak. The wine has a lively, fruit-driven character, with enough structure to carry through to a composed, lingering finish. It would pair especially well with grilled steak, roast lamb, braised beef, or mushroom-based dishes.
Already approachable, this is a balanced Cabernet Sauvignon with the freshness and structure to develop further over the next several years.

In the cellar
The grapes were hand-harvested at approximately 24.5° Balling, with the final wine comprising two equally sized components. Half the fruit was hand-sorted and fermented in wooden foudres, while the remaining 50% fermented in stainless steel tanks. Extended skin maceration followed fermentation to develop color, flavor, and tannin structure. The wine was then transferred to French oak barrels for malolactic fermentation and maturation, with 20% new oak used. After 18 months of aging, the individual components were blended before bottling.

About the Winery
Fairview is a working farm, housing a collection of micro-businesses all sharing in a common goal – to craft artisanal and sustainable produce, with a focus on fine wine and cheese. Everything they do is driven by their philosophy of being honest, honoring their heritage and ensuring their ingenuity. Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, they are one of the few farms that proudly own all their own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch.
