Description
Fairview Beryl Back 2025 is a layered Paarl white blend made from Chenin Blanc, Viognier, Verdelho, and Roussanne grown on the slopes of Paarl Mountain. Fruit from higher-altitude, south-facing blocks brings freshness and structure, while lees contact in oak and clay gives the wine breadth and a more rounded texture.
The nose opens with stone fruit, fresh mango, and spring blossom, followed by a subtle oak note. On the palate, crunchy grape and ripe summer fruit are supported by a gentle creaminess that adds weight without dulling the wine’s freshness. The combination of fruit, texture, and measured oak carries through to a balanced, persistent finish. It would pair especially well with roast chicken, grilled seafood, creamy pasta, or richer vegetable dishes.
Already expressive, this is a structured white blend with enough freshness and palate weight to develop well over the next several years.

In the cellar
The components were selected from top-quality estate vineyards planted in decomposed granite soils on the slopes of Paarl Mountain. The Chenin Blanc, Verdelho, and Roussanne come from south-facing, higher-altitude blocks below the Paarl Mountain Reserve, while the Viognier is grown lower on the estate near the original manor house. Time on the lees in both oak and clay vessels contributes additional texture and complexity while preserving the freshness and individual character of the varieties.

About the Winery
Fairview is a working farm, home to a collection of micro-businesses that all share a common goal: to craft artisanal, sustainable produce, with a focus on fine wine and cheese. Everything they do is driven by their philosophy of being honest, honoring their heritage, and embracing their ingenuity. Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing instead to “go where the terroir is.” Today, Fairview is one of the few farms that proudly owns all its own vineyards, with land in Paarl, Darling, Swartland, and Stellenbosch.
