Kruger Family Wines is led by winemaker Johan Kruger, who grew up on his family farm, Sterhuis, in Stellenbosch. His path took him through Jordan Wines in Stellenbosch, as well as winemaking experience abroad in the United States and Burgundy, shaping his love for vineyard-specific wines with a strong sense of place.

What makes the Kruger Family Wines story especially interesting is its freedom. The family does not own a winery or vineyards in the traditional estate model. Instead, they lease vineyards and rent cellar space, allowing Johan to seek out distinctive parcels across South Africa and bottle wines that speak clearly of their origins.

That approach feels particularly well suited to a wine like the Karoo Syrah. This is not a polished, predictable bottle from a familiar address. It is a wine from the edge — from a place where altitude, cold nights, wind, dryness and isolation all leave their mark.

Pepper-Crusted Beef Fillet with Smoky Eggplant Purée & Red Wine Mushrooms

Ingredients

Pepper-Crusted Beef Fillet

4 beef fillet steaks
2 Tbsp olive oil
1 Tbsp coarsely cracked black pepper
1 tsp sea salt
1 tsp fresh thyme leaves
1 garlic clove, finely grated
1 Tbsp butter, for finishing

Smoky Eggplant Purée

2 large eggplants
2 Tbsp olive oil
1 small garlic clove, finely grated
1 Tbsp lemon juice
2 Tbsp Greek yogurt or crème fraîche
½ tsp smoked paprika
Salt and freshly ground black pepper, to taste

Red Wine Mushrooms

2 Tbsp olive oil
1 Tbsp butter
12 oz mixed mushrooms, sliced or torn
1 small shallot, finely chopped
1 garlic clove, finely grated
½ C red wine
½ C beef stock
1 tsp fresh thyme leaves
Salt and freshly ground black pepper, to taste

To Serve

Fresh thyme
Extra cracked black pepper
A drizzle of olive oil

Method

Prepare the Smoky Eggplant Purée

Char the eggplants over an open flame, under a hot broiler or on a grill until the skins are blackened and the flesh is completely soft. Transfer to a bowl, cover and allow to steam for 10 minutes.

Peel away the charred skins and place the soft eggplant flesh in a food processor with the olive oil, garlic, lemon juice, yogurt or crème fraîche and smoked paprika. Blend until smooth, then season with salt and black pepper. Keep warm.

Make the Red Wine Mushrooms

Heat the olive oil and butter in a skillet over medium-high heat. Add the mushrooms and cook until golden and deeply browned. Add the shallot, garlic and thyme, then cook for another 1–2 minutes until fragrant.

Pour in the red wine and simmer until reduced by half. Add the beef stock and cook until the mushrooms are glossy and the sauce has thickened slightly. Season to taste and keep warm.

Cook the Beef Fillet

Pat the beef fillets dry with paper towel. Rub with olive oil, cracked black pepper, sea salt, thyme and garlic.

Heat a heavy-based skillet over medium-high heat until hot. Sear the fillets for 3–4 minutes per side, depending on thickness and preferred doneness. Add the butter in the final minute and spoon it over the steaks as they finish cooking.

Remove from the pan and rest for 5 minutes before serving.

To Serve

Spoon the smoky eggplant purée onto each plate and top with the beef fillet. Spoon the red wine mushrooms over and around the beef, then finish with fresh thyme, extra cracked black pepper and a light drizzle of olive oil.

Serve with Kruger Family Wines ‘Karoo’ Syrah 2023, ideally decanted for 20–30 minutes before pouring.
